Ingredients:
2 tablespoons butter
1 yellow medium onion chopped
2 cups chopped corned beef
3 cups 1/4 diced potatoes
Instructions:
Melt butter in large skillet – use medium heat.
Saute onion in melted butter – 4 or 5 mins.
Add potatoes, corned beef – cook 10 to 12.
Be sure to stir occasionally so as not to burn potato. If desired, fry an egg or two for each serving , serve and enjoy.
