Mimi's Place: Easy-Peasy Corned Beef Hash




Fall weather bring about changes in wardrobe, work habits and sleeping patterns and, at Mimi's Place, the menu for yummy, comforting meals.

This easiest-ever Corned Beef Hash recipe is one that always delivers.

Ingredients:

  • 2 tablespoons butter

  • 1 yellow medium onion chopped

  • 2 cups chopped corned beef

  • 3 cups 1/4 diced potatoes

Instructions:

  • Melt butter in large skillet – use medium heat.

  • Saute onion in melted butter – 4 or 5 mins.

  • Add potatoes, corned beef – cook 10 to 12.

Be sure to stir occasionally so as not to burn potato. If desired, fry an egg or two for each serving , serve and enjoy.
