One if Mimi's favorite things is to find a restaurant dish I love and try to figure out a way to duplicate the taste and texture of that dish in my own kitchen.
In fact, the "Little's" call me "Copycat Mimi" for my ability to find a way to make what I cook taste just like what they serve in restaurants, and this knock-off of Cracker Barrel's Cheesy Hash Brown Casserole in one of my favorites.
It's so good I've been waiting on a cease and desist letter from Cracker Barrel!
INGREDIENTS
2lbs frozen hash browns
1⁄2cup margarine or 1⁄2cup butter,melted
1(10 1/4 ounce) can cream of chicken soup
1pint sour cream
1⁄2cup onion, peeled and chopped
2cups cheddar cheese, grated
1teaspoon salt
1⁄4teaspoon pepper
Preheat oven to 350°F and spray an 11 x 14 baking dish with cooking spray.
Mix the above ingredients together, place in prepared pan and bake for 45 minutes or until brown on top.
